BLT Pita's for dinner...

The girls and I have eaten at Scarborough Faire, a really neat local place and I have always wanted to reproduce one of our favorites here at home. Today was the day! I found a recipe for homemade pita's and decided that I was going to try this since I had the produce and the bacon on hand. This is what I started out with...prepping the veggies...


Then I had to make the sauce. That was the tricky part. Neither Amy or I could remember exactly what the special sauce tasted like, but mine was 1/2 and 1/2 Hellman's mayo and sour cream, 1 t. sugar, pinch of salt, dash of Curry powder and a 1/2 freshly squeezed lemon. Tasted pretty good!!! Leave out the curry if you don't like that spice though.

This is my veggie combination all prepared....and ready for the sauce to be stirred in!

YUM!!! Tasted very close to the original!

Oh....I did make the pitas before the salad....and here's the recipe and directions! She has a cute website with many recipes, so check her out!!


Yummmmmm...this was a very tasty meal, light and could be lowfat if you used lowfat mayo and yogurt instead of sour cream. Close to the great little restaraunt...and that's good enough for me!

Happy First Anniversary!!

A YEAR has gone by and what a year it has been! A wedding, a family, a kitty, every room in their house being re-painted and re-decorated, a baby on the way, a new church...whew...that's an action packed year! So thankful for you guys and so happy the Lord reunited you again after all those years! May you continue to walk in HIS ways and serve HIM together! We love you!!!

Friday Favorites...

This is what a tired lady looks like when she's just laid, ummm...I mean MADE durn near a dozen eggs for her good friends, Jeanne and Cheryl! I want ya'll to meet my dear friend Leslie! The Lord brought her into my life about 5 years ago, but she didn't know it until just a little over a year ago. We love thriftin' and keepin' our homes, makin' our hubby's happy and carin' for the youngin's! (well, I aint got no youngin's at home no more, so mine are givin' me grand-youngin's to keep me young!) She has learned to be soooo creative and she is such a sweet little 'thang' to think about we, whom she left behind (b/c she moved on to a beautiful place in the woods!) to fend for ourselves! Sooo...now ya wanna see what she's been up to????????

Look at THESE glittering beauties!!! These belong to my other friend, Jeanne. Jeanne is more shabby chic in her decorating style (good thing, so we don't fight when we go thriftin' together!) so thoughtful Leslie made her sparkly eggs...in such beautiful Easter colors! (word has it she found the glitter at Wally-world, 3? colors in a pack!). Her daut, 'Buttercup', blew the egg guts out with her very own lungs (yes, she's a singer!!) and didn't crack a one of 'em!

Aren't they just the pertiest things you've ever laid eyes on? And I think Jeanne's bunnies are so happy to be nestled around 'em...don't you?? Must be girl bunnies!! NOW...what you've been waiting for...MY EGGS!!! I LOVE primitive things...more country in nature so that dear girl hand stitched my eggs! And I put 'em all in ONE BASKET!!! Can you believe that??

Now look at the detail!!! Hand picked fabric and she cut each one out and sewed those things together to make them look like EGGS!! (and word up to the 'LOVE' family...they DON'T look like footballs...they look like EGGS!) So quit makin' fun of 'em!!!


I JUST love this girl! Thank you Leslie for all your thoughtful, hard work! We sure don't deserve it, but we love it!!!

Praying for your hubby...

Mary wrote yesterday about praying the Word of God. The following story by Joni Eareckson Tada* beautifully exemplifies this concept. Enjoy!

E. M. Bounds was known for his extraordinary prayer life. He once testified,

The Word of God is the fulcrum upon which the lever of prayer is placed, and by which things are mightily moved. God has committed Himself, His purpose, and His promise to prayer. His Word becomes the basis, the inspiration of our praying, and there are circumstances under which by importunate prayer, we may obtain an . . . enlargement of His promises.

. . . I will never forget the time I received an "enlargement of His promises" from praying Scripture. It was in the early '80s, not long after the honeymoon was over for two newlyweds: Ken and me. I learned that my new husband preferred to spend Monday nights in front of the TV with chips, salsa, and the NFL rather than being my hands to write out my Bible study for me. Horrors, I thought, he's not a man of the Word!

I was itching to change my husband, but my nagging and scolding only made things worse. Feeling like a martyr, I sought help in God's Word and stumbled across these words in Phil. 2:3-4:

“Do nothing out of selfish ambition or vain conceit, but in humility consider others better than yourselves. Each of you should look not only to your own interests, but also to the interests of others.”

Yikes, that's me, I thought. I've wanted Ken to change for selfish reasons so that he'll meet my expectations. And to be honest, I don't consider him "better than myself." I feel I'm the one in the right. I feel I've got it spiritually together, not him.

I was convicted. These verses catapulted me into a major prayer advance for Ken. I sincerely wanted to follow God's Word and have humility of mind, as well as to regard Ken better than me. How could I look out for his interests? I feverishly flipped through Scripture until I found the perfect passage to pray for my husband.

"Who may ascend the hill of the Lord? Who may stand in his holy place? He who has clean hands and a pure heart, who does not lift up his soul to an idol or swear by what is false. He will receive blessing from the Lord and vindication from God his Savior. Such is the generation of those who seek him, who seek your face, O God of Jacob. Selah. Lift up your heads, O you gates; be lifted up, you ancient doors, that the King of glory may come in. Who is this King of glory? The Lord strong and mighty, the Lord mighty in battle." –Psalm 24:3-8

I'd spend evenings in our bedroom, praying, "Lord, You want Ken to stand in Your holy place, to have clean hands and a pure heart. May You cause him to lift up his soul to You and receive Your blessing. May he seek Your face. Lift up the gates of Ken's heart that You, the King of glory, might come in! Lord, say to him, 'I, the King of glory, will come in and rule your life. I, the Lord, strong and mighty.'"

I can't tell you how many times I prayed this way. But now, years later, it's clear that Christ sits on the throne of my husband's heart. (He's in the process of memorizing the entire Sermon on the Mount; I didn't put him up to it, really!) Something else is clear: Ken still loves Monday Night Football. What has changed is that so do I! And I've found other "hands" to help me write out my Bible studies on other evenings.

I began praying Psalm 24 over my husband believing that God would change him, but God did much more. He changed me. It was, as E. M. Bounds would say, "an enlargement of His promises." I'm convinced we are still feeling the repercussions of that Scripture prayer. That's because it was based on Psalm 24 and was alive, active, and powerful, bringing about fundamental changes in me where it counted most. And in my husband, too.

The Bible is our prayer book, and we'd be remiss to neglect its riches. It holds the key to finding God's will when we pray, providing balance and meaning. Great themes abound–God's holiness, wisdom, faithfulness, sovereignty, love, and mercy--all of which beautify our praises, adorn our intercessions, embroider our petitions, and give weight and significance to every supplication.
Most of all, using the Word of God in prayer is about as close as we can get to the Living Word, the Lord Jesus. If we're going to pray in His name, it makes sense to speak in His language.

Old photo's...for Anna



I was going through old photo's this past weekend and lookie what I found! Anna, I TOLD you I had this somewhere! I stumbled across a lot of shots that made me smile! Hope they bring a good laugh to your belly too! I LOVE this shot of Amy and Ally giving each other a kiss! I think Amy was probably looking over at the camera saying, "Mommy, are you going to take it?" She tried to be in charge WAY back then too!!! Love you girlies....and miss those sweet times together!

Lemonhead Wreaths...


Check out how C-U-T-E this lemonhead wreath is for Spring!!! If only I had a front door that didn't have a storm door on it! (well actually, I DO like having a storm door so I can open my front door and let the breeze blow in when I put my screen in!) I'm thinking about making a couple of these for my front windows though. Not sure how much a "gross" of ping pong balls would set me back, but I'm gonna check it out! SOOO cute! Of course, this isn't MY idea. I got it here. This kind and witty woman gives all the instructions!! Don't ya love bloggers?? I thought maybe one of you with just a front door could use it! Such a fun craft to include the little kiddos in too, don't cha think? I can just see glitter in their hair!

More invitations...and another kick!


Sooo....here are the invitations I made for Ally's shower. Patti, her sweet mother in law is having it for her! Like for Amy's shower, most you of you who read my blog won't be able to come back for this party either, but I wanted you at least to have a sneakie peekie of what we had going on here! Like for Carters room, these were made to coordinate with Kierstyns room. These little grannybabies are going to have the most beautimous bedrooms! Now we just need to get em filled!

Tuesday Ally didn't feel very good so she called me at 7:20 AM to come pick her up from work. She had car pooled with Adam and he had the car, so I ran her by the Dr. office for a quick test, stopped at Target for some antibiotics...then brought her home to lay on my couch for the day. There's just something comforting about laying on Mom's couch...and I think making her lunch and talking most of the day was healthy too! We watched "The Baby Story" on TLC....about 3 episodes, and before we knew it, Adam was here to pick her up and take her home. She's feeling MUCH better now...so thankful for medications when they are needed!
Oh....and by the way....I FELT HER KICK!!!

My eyes get wet and my heart gets thumpy when I feel my grandchildren kick in the womb. Of course, the girls humor me and let me be goofy....pushing around on their belly's and talking real close so my grannybabies will hear me and hopefully love me when they come out! I cannot WAIT until they get here! Amy sent me a link to an old school friends video he shot of his wife going into labor and after the deliver just this week and I sat here and bawled a bucket! There is just something so "GOD LIKE" when you watch (or hear) a child come into this world! I remember my own girls' birth like it was yesterday and there is nothing like it...hearing that first cry, feeling their soft skin, smelling the freshness of birth, seeing those little squinty eyes try to focus on you (but moreso they respond to your voice b/c they can't focus for a few days), hearing those baby squeeks and smacks as they root for their dinner....ahhhhh....I remember. And I am soooo thankful the Lord has seen fit to give my daughters their own to love the same way! Thanks for listening....I'm just having one of those moments.



Patti asked me to make 50....she has a LARGE extended family! So...here is a shot of a BUNCH of baby buggies!! Patty better hope and pray that all of these recipients don't show up b/c she's having it at her house! (I'm sure she wanted extras!!) Ha!

Thanks for sharing my joy...my heart is overflowing with thanksgiving already!! I'd say these little babies are going to be my Friday Favorite for many Friday's to come! Someday, I hope to get back to some of my kitchen favorites...or something more clever than showing you my crafts! But for now....indulge me! : )

American Idol Look Alikes

Okay...one show I don't miss unless there is something BIG going on is American Idol. I make sure dinner is over and the dishes are "done man", b/c I really enjoy seeing these kids sing! I'm thinking tomorrow might be the night the judges use their one "save" b/c either the ones that didn't do so well tonight are obviously coming back or else the ones that I thought might go, really did a great job tonight. Actually, I'm thinking that Scott might be headed home or maybe Michael, even though I really like him. I think Michael should have "brought it on more" since country is his style of singing. He just might have missed his shot. I still like him, but he won't win it all anyhow. Then there was little Alexis...she too could have picked a more powerful song, but played it safe and sounded good. I think she'll stay for sure. Megan Joy...that girl was sick? She sounded better tonight than last week by far! I haven't made up my mind on her yet. I keep waiting for something GREAT, but it never comes. She's got such an interesting voice though.

Some of you know that we like pictures are our house! We like to go through the church directory after dinner and make comments about people...what they might be thinking, saying or who they look like and tonight it struck me who this young feller looks like....

Any guesses??


I'm 'thinkin....an Indian Tiger Woods!! Right down to his attitude and gestures! Okay, his hair IS a little longer than Tiger's! Did you see how he responded when Simon told him it was good tonight? The very SAME WAY Tiger does after a good hit. Anoop has a MUCH better attitude when it comes to criticism though! Check it out...do you see it???
Okay...so you think I have too much time on my hands? Well, if I had more, I'd put all the A.I. finalists pics on here and tell you the names we've given them! We have more fun with this show! (amy, you KNOW you miss us!!!) Ha!

Spring has SPRUNG!!!

There are signs of Spring all over my place today! Doesn't it just thrill your soul to see the daffodils begin to bloom? I'm thinkin' I'll see a flower or two by the end of the week!?!?
So this afternoon we declined to take our normal Sunday afternoon naps. My Mister started raking up the old leaves and picking up fallen branches the winter storms left behind this year! He got 5 large garbage cans FULL of debris! I had the itch to get my porch open so we could start eating out there. Lookie what I did!!!

This makes me smile...all second hand from one place or another. Remember, the dry sink I picked up off craigslist for $30.00 last year? Wow...that was one of my best finds! All the other stuff was either gifts, garage sale or thrift store. That's what makes my 'ode laty' porch so special! I hardly spent anything out there! ( That is, after the initial construction! Thank you honey and SIL!)
I ran out of time for dinner out there tonight. I still have to wash the chairs with warm soapy water...to get the gunk off them, and get the cushions out of the shed. But I got the table shined up real good...so tomorrow night, we'll be dining ' Al Fresco'!!!
And this is a true sign of Spring for us...Chicken Cesar Salads....made with leftover grilled chicken from the other night...
...and homemade croutons using up a leftover stale loaf of sourdough bread. Ahhhh....it doesn't get much better than this! 60 degrees today...and warmer weather coming in tomorrow! Thank you LORD!

When Daut gives you Lemons....


Yesterday we had Bible Study here and my Mister was sooo sweet to help me clean the house! He is so thorough when it comes to running the vaccum...I think I will hire him! ; ) We had a wonderful study last night...with Mike teaching us from the book of Galatians. We have added another to our midst, bringing us up to a regular attendance of 15 + kids!! We have added specific names to our prayer list and this past week the Lord actually stirred the heart of one of them to come last night. We were so blessed! A LIKE MINDED BELIEVER is in our midst!! He stayed until 11:45 last night as we discussed the Word, Doctrine, how the Lord is working in our lives, etc. Dennis and I were so refreshed...even at that late hour!
This morning we got up, read, worked out and when he was ready to tackle some tasks, I headed to the kitchen to make dinner....and this is what I came up with! Actually, I did grill chicken, roast potatoes and had veggies too, but this pie was calling my name. Nothin' beats a FRESH Lemon Pie! I don't ever recall making one with fresh squeezed lemons before. THANKS AMY! Wish you, Brian and Rylie were here to help us eat it. Since lemon pie is best when it's fresh, Dennis and I ran a couple big pieces over to Mom and Dads. Do any of you know how to make meringue that doesn't weep on the top? Mine seems to do this everytime! Not that it stops us from eating it, but I'd sure like to have a real pretty pie sometime! Now....we are left facing 2 more pieces...oh dear....what to do, what to do???
Fresh Lemon Pie
Filling:
1 1/2 cups sugar
5 tablespoons cornstarch
1/4 teaspoon salt
1 1/2 cups hot water
4 egg yolks, beaten (save the whites in a small mixing bowl)
1/2 cup fresh lemon juice (use freshly squeezed - you'll be using the rind, too)
1/2 - 1 teaspoon grated lemon rind (use that fancy pants microplaner!)
2 T. butter

1 baked 9-inch baked pie crust

Directions
In a saucepan, mix the sugar, cornstarch, and salt together. Pour 2 c. hot water over and stir until smooth; cook, stirring constantly, until mixture just begins to thicken. Reduce heat to low and cook until thick; take off heat and whisk in the beaten egg yolks and cook 2 minutes longer on low heat. Remove from heat, stir in the lemon juice, rind and and butter and combine well; let cool for 5 minutes, then pour into previously-baked pie shell. If you like, you can cover with meringue and bake for 5-10 min. at 400 degrees.
Meringue:
4 egg whites
about 4 T. sugar
1/4 t. cream of tarter
In metal or glass bowl, beat egg whites until fluffy...slowly add sugar, beating for a min. after each T. addition. Finally, beat in cream of tarter and whip to soft peaks. (you'll know it's ready when you lift your 'still' beaters out of the meringue and it forms stiff peaks. Spread over pie filling and lift your spoon to make peaks on the meringue. Bake at 400 for about 5-10 min. watching closely so you don't burn the tips. Cool on rack and serve your honey!

Girl went home...and unconfessed sin

Today was bittersweet. Dennis and I took Amy to the airport at 2:00...got there by 3:00. He pulled into the parking garage rather than the drop off b/c he wanted to make sure his girl and his grandson were well taken care of clear up to security! Said a few tearful good-byes but so thankful that we get to make another trip to Phoenix in just a couple of months to meet our new grandson! (Lord willing!) She was ready to go back home...and that blessed our hearts real good.
Side note: Amy's flight was delayed almost 2 hrs. b/c the weather (wind) was so bad that a small corporate jet skidded off the runway at Midway. The airport closed to all landings for awhile, so her flight was redirected to Indianapolis. It later made it's way back to get her, but she got a late start. Just got a call from her a few minutes ago and she was about to fall into the arms of her beloved again...and all is well with the world. She said she sure was sore from sitting so long, other than that, she was fine and glad to be back in the 70 degree weather. In the meantime, the wind shifted from the south to the north and the temp. here dropped from 60 degrees to 29. Argh..winter is back! The jet that slid off the runway was fine. No one was hurt. Just a little inconvenience for...say...SEVERAL HUNDRED PEOPLE! Ha!

Back at home, I read my email and Kim Wagner from the True Women Conference had posted this today...I am putting it on my blog b/c I NEVER want to forget this. I want it to be at my fingertips whenever I need to read it again and I hope you all are encouraged by it as well. I know I take my own sin WAY to lightly. I know this b/c I tend to dash right into my "petition mode" before I think about my "confession mode". I need this to change in my heart...I want to be more like the Puritans!

"Normally I begin my morning with “The Valley of Vision” a collection of
puritan prayers and devotions. This little jewel was a gift from my
friend, Nancy DeMoss, several years ago and is a valuable tool for
prayer instruction. I've found it helpful because of the Puritans'
perspective on sin. They lived with a vivid awareness that sin breaks
fellowship with God. Their prayers are filled with honest and
impassioned confession of sin.

Their perspective readjusts thinking influenced by a sin-saturated
environment. The modern culture's view of sin is depicted more often by
the phrase, “It's no big deal” rather than the puritan cry, “Oh wretched
man of sin that I am!”


Because God's mercy is so deep, His lovingkindness so immense, we may
tag Him as “soft on sin.” But that is a gross misperception. God has a
“no tolerance” policy when it comes to sin. In fact, His standard is
unattainable by man—thus Christ's atoning work at the cross. We have no
excuse; our sin can be confessed and forgiven. However, when we fail to
confess our sin, it stands as a barrier to our fellowship with God. If I
really want to have nothing blocking my communication with God, then I
must get serious about dealing with my own sin!

“Behold, the Lord's hand is not so short that it cannot save; nor is
His ear so dull that it cannot hear. But your iniquities have made a
separation between you and your God, and your sins have hidden His
face from you so that He does not hear” (Isaiah 59:1-2).

The Psalmist records how this dilemma can be remedied:

“Come and hear, all who fear God, and I will tell of what He has
done for my soul. I cried to Him with my mouth, and He was extolled
with my tongue. If I regard wickedness (hold onto my sin) in my
heart, the Lord will not hear; but certainly God has heard; He has
given heed to the voice of my prayer” (Psalm 66:16-18).

Herein lies the key to overcoming sin: desiring fellowship with God more
than my sin.

The equation is simple really: Unconfessed sin equals no audience with
God; Confessed sin means God is “all ears”! Which brings me to the point
of our discussion today . . . Why do we delay in confessing our sin to
an all-knowing merciful Savior? I think it has to do with the fact that
once we confess, we then are required to repent (turn from) that sin–and
so often our desire to hang onto the sin is greater than the desire for
fellowship with God. What do you think?"

Amy's Baby Shower


We had SUCH a lovely day! I wish you all could have been here, but since most of you are miles away, I hope you enjoy the day captured digitally! There was quite the storm passing through NW Indiana this afternoon, but that didn't stop anyone from coming out to Ally's to celebrate! Little Carter is going to be the best dressed boy on the block thanks to the generosity of so many friends and family this afternoon. I think baby showers are even more fun than wedding showers! I loved gaining son's when the girls married, but I am pretty sure I'm going to enjoy the babies even more! What a day! Enjoy!!!

Opportunity of our Words

Every day we are given the opportunity to make a difference in someone's life. Every time we open our mouth to speak, we send forth words which have an effect on those around us. Our words, which come "out of the overflow of the heart" (Matthew 12:34), will either cause a positive or negative reaction - our word are rarely neutral. Knowing the power of our words ought to cause us to use them with great care.

Ephesians 4:29
"Do not let any unwholesome talk come out of your mouths, but only what is helpful for building others up according to their needs, that it may benefit those who listen."

This means that every time we speak, we have the opportunity to encourage and minister. With just a few moments of our time and very little effort, we have the opportunity to brighten someone's day, to ease their burden, and possibly draw them closer to God. This precious opportunity must not be taken lightly; "But I tell you that men will have to give account on the day of judgment for every careless word they have spoken" (Matthew 12:26).

If we have received Jesus as our Lord and Savior, our careless words are eternally forgiven. And yet, our words remain a reflection of our heart. God has given us a new heart which ought to be filled with devotion, and our words should be filtered through a desire to bring Him glory and honor. But sometimes we smother this heart and fail to let it shine. Though forgiven, we must also give an account of the damage our words have caused.

We seldom realize how harmful and discouraging our words can be; "Like a madman shooting firebrands or deadly arrows is a man who deceives his neighbor and says, 'I was only joking!'" (Proverbs 26:18-19). Sarcastic and joking words are "deadly arrows" which are never useful for "building others up." Over time, these words are sure to destroy a relationship.

Before we speak, we must carefully listen. What is the real question? What are the real needs or concerns? "He who answers before listening - that is his folly and his shame" (Proverbs 18:13). We may only be given the opportunity to speak a few words, but we can make every effort to use our words wisely; "The heart of the righteous weighs its answers, but the mouth of the wicked gushes evil" (Proverbs 15:28).

Our words are a powerful gift. Let's honor our Heavenly Father by effectively using this gift to encourage. Let's speak so those who listen may benefit and be built up in their faith. Let's continually encourage one another to draw closer to our Heavenly Father and never squander the opportunity of our words.

~~~2 Birthdays and a Crib~~~



Friday afternoon I made dinner then Dennis and I headed out to pick Adam up from work, then on to Valpo to Penny's to pick up the crib that was ordered last week. Loaded it up in the truck and went to their house. Got the meatloaf in the oven about the time Allyson got home from work so we visited while the meal was cooking and made plans for the next day...and they had BIG plans! Just fell into bed and began hearing a familiar "meow" since we brought Punkin along to play with her cousin. She decided she would rather come sleep in our room than in the basket...so in she came. We didn't want her keeping the kids awake all night, so we opted to stay awake ourselves. That will never happen again. Sorry Punkin, you stay home next time!
Next morning, Adam made breakfast: Hash browns,sausage and scrambled egg skillet and Monkey Bread, O.J. and coffee. Such a nice breakfast sitting in the sunshine, something we haven't seen for QUITE awhile now!
Then...our talk turned into work, so we cleaned up the kitchen, got dressed and to work we went. Moved furniture out of the Den and into the LR, moved the bed from the guest room into the Den, which is now the guestroom. The boy's moved the treadmill (for the LAST TIME so they say) from the guestroom to their bedroom. They went back to work on putting up beadboard in the laundry room until they ran out of wood....SIX INCHES TO GO! So...they had to stop and Adam got another box and had it finished this afteroon. Stopped for lunch...oh she makes THE BEST sub sandwiches! Anyone that puts dill pickle slices on their subs makes them WONDERFUL! ; ) Cleaned up the dishes again, kept the laundry going, still moving furniture, and moving it back again (you understand this one, don't cha Am? Ha) Then it was time for the boys to start setting up the crib. Of course, they don't come with a mattress, so they'll be searching for one of those, but we put a duvet cover in the bottom so it looked perty! That's all they have...a crib. That's all they can afford now...a crib! Ha! This amazing crib comes with regular bed rails, so when Kierstyn is big enough, this will be her regular bed. I reminded them that if they have more children, they'll have to buy another crib then and Ally replied, "the second one will come off craigslist!" I asked if she was talking about the baby or the crib! Ha!
The day ended with us being EXHAUSTED from moving furniture and cleaning, but Ally made the most delicious BD dinner for her Daddy and her MIL. Chicken Marsala, Roasted Potatoes and Onions, home canned green beans from their garden and whole wheat french bread. Topped it off with a homemade Upside Down German Chocolate Cake. It was DELISH and the BD folks were happy as larks! Thank you Ally and Adam! We had a beautiful time! And thanks for letting us help!!! I love having a sleepover in the country!
